- In a large mixing bowl, combine the flour, water, sourdough starter, sugar, cinnamon, and salt. Mix until a shaggy dough forms.
 - Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.
 - Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
 - Once the dough has risen, punch it down and roll it out into a rectangle on a lightly floured surface.
 - Brush the melted butter over the dough, then sprinkle the cinnamon sugar mixture evenly over the surface.
 - Starting from one of the long edges, tightly roll up the dough into a log.
 - Place the dough log into a greased loaf pan, cover with a kitchen towel, and let it rise for another 30-60 minutes.
 - Preheat the oven to 350°F (180°C).
 - Bake the bread for 35-40 minutes, or until golden brown and hollow-sounding when tapped on the bottom.
 - Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
 
Note
For extra flavor, you can add chopped nuts or raisins to the cinnamon sugar filling.
