A delicious and aromatic bread with swirls of cinnamon sugar throughout, perfect for breakfast or as a sweet treat any time of day.

Method

  1. In a large mixing bowl, combine the flour, water, sourdough starter, sugar, cinnamon, and salt. Mix until a shaggy dough forms.
  2. Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.
  3. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  4. Once the dough has risen, punch it down and roll it out into a rectangle on a lightly floured surface.
  5. Brush the melted butter over the dough, then sprinkle the cinnamon sugar mixture evenly over the surface.
  6. Starting from one of the long edges, tightly roll up the dough into a log.
  7. Place the dough log into a greased loaf pan, cover with a kitchen towel, and let it rise for another 30-60 minutes.
  8. Preheat the oven to 350°F (180°C).
  9. Bake the bread for 35-40 minutes, or until golden brown and hollow-sounding when tapped on the bottom.
  10. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.

Note

For extra flavor, you can add chopped nuts or raisins to the cinnamon sugar filling.
